Is it possible to create guilds on the tournament server? Would make it a whole lot easier to divide ourselves up

NO, there are NO NPC's, NO Auction House, No Bankers, NO Quest Givers, NO critters, NO mobs, NO quests, there is NOTHING there but land and sea ;)

The only other people you will see, besides players, are the arena vendors and trainers. All on pedestals in the major cities.

The best you can do on the Arena Pass Realm is make a chat channel. It would be pretty easy for everyone who was interested to type "/join WarcraftPets" (or something similar). It's not actually Guild-Chat, but it could function pretty similar.
