Doing some sweeps of Cata zones here's what I've found so far:

Uldum
Mac Frog
Oasis Moth
Locust
Emerald Boa
Horned Lizard
Tol’vir Scarab (Capturable - Near any cities/ruins)
Desert Spider
Leopard Scorpion
Dung Beetle
Sidewinder

Twilight Highlands
Shore Crab
Grizzly Squirrel
Rattlesnake
Scorpion
Yellow-Bellied Marmot
Cockroach
Twilight Spider
Black Rat
Highlands Skunk
Highlands Turkey
Highlands Mouse
Wildhammer Gryphon Hathcling (not able to battle at this time)

Deepholm
Emerald Shale Hatchling
Topaz Shale Hatchling
Amethyst Shale Hatchling
Crimson Shale Hatchling
Crystal Beetle
Deepholm Cockroach
Fungal Moth
Twilight Spider
Stowaway Rat
Crimson Geode (Capturable - Crimson Expanse)

Vashj'ir
Rockchewer Whelk in Shimmering Expanse and Crab Hatchling in Kelp'thar Forest
Both are critters but are not showing up on tracking and cannot be fought. Possible they may become available to battle later at this point they are no pet battle critters in Vashj'ir.

Mount Hyjal
(I did this with Hyjal fully phased to FL dailies+all quests it may vary for unphased players)
Fire-Proof Roach
Twilight Beetle
Death's Head Cockroach
Elfin Rabbit
Silky Moth
Alpine Chipmunk
Ash Lizard
Rock Viper
Fire Beetle

Twilight Fiendlings were at the Twilight Breach just north of Victors Point in the Twilight Highlands.

Add Carrion Rat to Mt.Hyjal.
Not seen one on minimap, but had one in my team vs me just now.

No bear to trap in Hyjal? Even tho there is a quest for helping them? Blizzcrew really need to work on the pet stories...

You get a Hyjal Bear Cub from the quest chain... so I doubt they'd implement another one :P

Yeah, but there are tons of other zones with rather unique mobs, that ain't possible to trap.
