I wouldn't have a problem with level 30 pets, but I am interested to see what Blizzard is able to come up with without adding more levels. There are certainly problems with more levels (i.e., they like the way the system works and its simplicity, so those levels would like not unlock new abilities or buttons... would that then be interesting to people), and not adding more levels also adds problems. Since we always assumed that there would be more levels in the next expansion, I wouldn't be opposed to seeing something I did not expect.
